If you follow me on Instagram you’ll know how much I love smoothies. I drink a lot of them, which means I’m always on the lookout for new flavour combinations for my next healthy drink.
Last week, I got an email from Williams-Sonoma, one of my favourite homeware brands, asking me about my love for smoothies and inviting me to take part in a challenge looking at unconventional smoothie flavours. I knew that my spinach, cucumber and carrot smoothie fell firmly into this category. Not because the ingredients are unconventional, but because of the lack of fruit.
A lot of people, my husband included, find the idea of a fruitless smoothie quite off-putting. I’ve dabbled a lot with vegetable juices and smoothies and this is by far my favourite one. The carrot gives it a slight sweetness and the spinach and cucumber give you all the green goodness you need to get your day off to a great start. Have I convinced you to give it a try? If so all you need to do is blitz 100g of fresh spinach with two small carrots, half a cucumber and 250 ml (1 cup) of water. It’s that simple and it really is tasty.
