Spinach, cucumber and carrot smoothie

If you follow me on Instagram you’ll know how much I love smoothies. I drink a lot of them, which means I’m always on the lookout for new flavour combinations for my next healthy drink.

Last week, I got an email from Williams-Sonoma, one of my favourite homeware brands, asking me about my love for smoothies and inviting me to take part in a challenge looking at unconventional smoothie flavours. I knew that my spinach, cucumber and carrot smoothie fell firmly into this category. Not because the ingredients are unconventional, but because of the lack of fruit.

A lot of people, my husband included, find the idea of a fruitless smoothie quite off-putting. I’ve dabbled a lot with vegetable juices and smoothies and this is by far my favourite one. The carrot gives it a slight sweetness and the spinach and cucumber give you all the green goodness you need to get your day off to a great start. Have I convinced you to give it a try? If so all you need to do is blitz 100g of fresh spinach with two small carrots, half a cucumber and 250 ml (1 cup) of water. It’s that simple and it really is tasty.     I think this looks so so good. I really want to start making smoothies. If I’m perfectly honest, I don’t have a dishwasher and the thought of washing all these dishes between meals sounds very unappealing to me. Is that lame? However, this looks so good and healthy and may have to break down and try!

    I love smoothies! Although I generally have ones with fruit. I do like juicing with vegetables though, and I’m sure I’d enjoy a green smoothie too haha. Will have to give it a go!

    Ya! Usually smoothies have a least one fruit in them. That’s cool that this one doesn’t. I’m sure the carrot is pretty sweet. My favorite smoothie flavor is dates and bananas. LOVE IT.

    I love veggie smoothies! I always end up adding a fruit juice to it though even if I don’t add actual fruit. I should go all-veg and see how I like it. It looks good!

    I used to drink smoothies regularly until my blender decided to die. I should probably get back into it though- it’s a great and easy way to get veggies into my diet
