Lamb, lamb and more lamb

Easter. That amazing time when it’s acceptable to over indulge like it’s Christmas again. Asides from chocolate – of which I have naturally eaten far too much of – lamb is usually the order to the day in our house and this year was no different. Normally, I use our leftover lamb to make a curry or layer on crusty rolls with mint sauce for lunch. But this year I tried something a little different and stuffed aubergines with the remaining lamb. Fancy giving it a try? The recipe is on AO at Home right now.
