Buckwheat overnight oats

Breakfasts can be tricky. Mixing it up whilst trying to be healthy is fine when you’re at home and you can whip up some eggs or make some pancakes. But if you eat breakfast at your desk like I do, you have to get creative, which is where my recipe for buckwheat overnight oats come in. It’s a healthy, delicious, gluten-free breakfast you can eat anywhere. Have I tempted you yet? You can find my recipe on AO at Home if you fancy making some of your own.

I got kind of obsessed with overnight oats last year but this year i’ve been more of a fan of the chocolate shreddies (that might be why my weight is creeping back up. hmmmm) I think you might have inspired me to bust them back out though. x

This looks delicious! I am coeliac so this is a perfect gluten free brekkie for me.

I’m not coeliac Polly but my mum and sister are so I try and eat gluten free as much as possible to get some inspiration for them. If you make this I hope you enjoy it :-)
