Can you tell that I’m channelling spring with today’s recipe? I’ve decided that since spring is taking soooo long to come to me, I would go to it. And boy did it work. It’s amazing what can happen when you throw some fruity flavours and a floral straw into the mix. In my mind I was sitting on a park bench surrounded by daffodils, wearing sunglasses to keep the daylight glare out my eyes and sipping on this refreshing apple, blueberry and coconut juice. In reality, I was snuggled up under a blanket, staring out of the window at the frost dusted rooftops. But a girl can dream, right?

This recipe was inspired by the lovely people at Buko, who sent me some organic coconut water to try. I have to say, I am now a convert. Coconut water works so well in juices and smoothies and is a really refreshing and super healthy post-workout drink. After receiving the samples, I discovered that Buko has a partnership with Cuipo, which means a small donation is made from every bottle of coconut water to support rainforest preservation. So not only is drinking Buko good for you, but it’s good for the environment too – double whammy!

Now, onto my juice. To make this glass of pure spring you will need:

  • 100g of blueberries.
  • 1 red apple
  • 250ml of Buko coconut water
  • Wash the apple and blueberries before chopping the apple into bite-sized chunks (don’t remove the skin – it has a whole lot of nutrients in it).
  • Add the coconut water and the chopped apple to a liquidiser or juicer. Whizz for a couple of minutes until the apple is thoroughly juiced. Now throw in the blueberries and pulse for a minute or so, or until you have the consistency of juice that you like.

Et voila: apple, blueberry and coconut juice. Healthy, delicious and a bit of a looker too, especially if you through a floral staw in.

      Me neither Miranda, I am officially over the dark mornings! I was surprised at how much I liked it, but it works really well as an alternative to just water. I’ll now happily experiment with using coconut water in other juice and smoothie recipes x

      I’m the same Cecilia, I don’t have a juicer so just use my liquidiser and it does the trick. I’d recommend giving coconut water a try – it’s really good :-)

      I got my straws from Not on the High Street Charlie. They had a huge selection of lots of different styles and prints, so there will be plenty to tempt you I imagine :-)

    I want to go to spring too!! We got so much snow in such a short period of time and they’re forecasting more for tonight. Booo!! Anyway, this sounds great. I make juices and smoothies, but have never experimented with coconut water. I’ll have to give it a go! I love that straw too.

    This sounds like such an unusual but delicious combination of flavors! I love coconut and it goes so well with everything, but I don’t think I ever would have thought to pair it with blueberries.

    I’ve been on such a smoothie kick lately so this is something I know I will try sooner or later!

    P.S. I’m very jealous of your floral straw! Is it a disposable one or a reusable plastic one? I’ve been looking everywhere for nice plastic straws but haven’t been able to find them. Maybe it’s just the time of year and I’ll have more luck in the actual summer (not just when it’s summer in my mind) ;)

      I was surprised it worked as well. It was one of those ‘this in going to go one way or the other’ kind of recipes, but fortunately it worked out and it’s really good! The straws are paper, so not reusable unfortunately, but I found them on Not on the High Street. com. They had a really impressive selection of loads of different styles xxx
